THE MOUSE: As far as we know, we are the only ones to have this cake available. Cavaliere’s decorators start with three layers of our own chocolate cake filled with two layers of our own chocolate mousse. We then make eight little mice on top of the cake, drench them with chocolate ganache, and finish the mice off with little almond ears and chocolate tails. Then we garnish the sides of the cake with toasted almonds.  It’s a fantastic center piece or conversation starter that will certainly make you “the hit of the party!” Available only in 7” round cake.

CHOCOLATE ALMOND*: Three layers of chocolate cake with toasted almonds mixed in before baking. Soaked with an almond simple syrup and filled with an almond cream, raspberry and chocolate ganache. Covered in an almond cream icing.

CHOCOLATE MOUSSE: Three layers of our chocolate cake with two layers of our own chocolate mousse and a coating of chocolate ganache. Enrobed with chocolate ganache and garnished with chocolate shavings.

LUTECIA*: Yellow cake with toasted almonds mixed in before baking. Soaked with an almond simple syrup and filled with chocolate ganache, almond cream, and raspberry. Iced in chocolate ganache.

RASPBERRY TRUFFLE: Three layers of our chocolate cake with two layers of raspberry filling and a coating of chocolate ganache. Enrobed with chocolate ganache. Everyday is Valentine's Day with this cake!  (Mrs. Cav’s favorite)

STRAWBERRY & PEACH CAKE (ITALIAN FRUIT CAKE): The traditional Italian “fruit cake” consists of three layers of our own Italian sponge cake soaked with strawberry juice. We then fill it with strawberries, peaches, and whipped cream.  It is topped off with our homemade whipped cream. Tastes like a big strawberry & peach shortcake.
